Hunter Valley Wine Tour From Sydney - Singapore Wine Lovers

Today I hosted wine enthusiasts from Singapore in the vineyards during early Autumn on their very own Hunter Valley Wine Tour from Sydney.

Today I took lawyer Siew & naval commander Xun into a famous Hunter Valley vineyard of Shiraz, just as the vines are starting to drop their leaves.

When the vines are bare & the sap flow has ceased in the canes, then pruning can be done, to set up the vines for the 2014 harvest.

Xun was fascinated with the structure of the soil in this vineyard, a heavy red clay, that acts as a reservoir for water to sustain the vines through their period of rapid growth in Spring (September - November) & early Summer (December).

Whilst French oak is the preferred choice for most top end Hunter Valley Chardonnays & Shiraz, quality American oak barriques can be very useful when used to best effect in adding a vanilla like tone to some styles of Shiraz.

Here Siew & Xun inspect an oak stave, the building blocks of a hand-made barrel.
